Incredible, Easy Low Carb Oatmeal Cookies

Did you know that there are about 19 grams of carbs in one cup of oats? And did you know that one oatmeal cookie contains an average of 31 grams of carbs? That is a crazy amount of carbs! If you are on a keto diet or just following a low carb meal plan, these high numbers are definitely not something you want to see. But the truth is, oats are completely off the list of keto-approved foods. They are one of the highest carb ingredients out there and would definitely break your diet.

So what are you supposed to do when you start craving an oatmeal cookie but just can’t have oats? You have to get creative! That is just what we did when we made these keto oatmeal cookies. We threw out our oats, said goodbye to all those carbs, and started trying to think of a new way to satisfy our need for soft, chewy oatmeal cookies.
Low Carb Oatmeal Cookies

When thinking about oatmeal cookies, the texture of the cookie is the first thing I usually think of. Classic oatmeal cookies are soft, a little chewy and have those flakey oat pieces. To replicate this, we used shredded coconut which has a very similar texture to oats. If you’re able to find unsweetened flaked coconut, that is even better! The coconut gives the cookies that oat-like texture that is essential to any good oatmeal cookie.

We also added thinly sliced almonds to the cookie batter to get an even more oatmeal texture. Not only do the nuts add a nice texture to the cookies, but they also give these keto oatmeal cookies a few extra healthy fats. Nuts are an excellent source of beneficial fats that you need on a keto diet. Fats fuel your body and will give you the energy to power you through the day. So, yes, that means these cookies are also “healthy” for your keto diet. Hurray!! Give me another cookie!
Keto Oatmeal Cookie Recipe

Oatmeal cookies are almost always flavored with cinnamon and vanilla. These two warm ingredients give the cookie its hallmark taste. You can’t have an oatmeal cookie without cinnamon! You also can’t have an oatmeal cookie without sugar. Cookies need to be sweet! Of course, sugar is a big no-no for us keto followers so we opted for So Nourished Granular Erythritol. It has the same texture as sugar and baked perfectly into cookies. Erythritol is all-natural and has no chemical aftertaste that comes with a lot of artificial sugars. It is perfectly sweet and will make your cookies delicious.

Making our keto oatmeal cookies is as easy as any other cookie recipe out there. Beat the butter and erythritol. Add the eggs and vanilla and then mix in the dry ingredients. We toss in a few keto chocolate chips at the end to make our oatmeal cookies even better but feel free to skip the chocolate if you want a pure, chocolate-free cookie.

While true oatmeal cookies are still off limits for those on a low-carb diet, you can satisfy your need for the classic cookie using this delicious recipe. These keto cookies have all the flavors and textures of an oatmeal cookie without all the carbs. We can guarantee that it is a recipe you will reach for time and time again. Enjoy!

Ingredients
Instructions
  1. Preheat your oven to 325 degrees F and line a baking sheet pan with parchment paper.
  2. Add the coconut and almonds to a large bowl and use your hands to mix them together, breaking the almond slices as you mix. You want the mix to look similar to rolled oats.
  3. Add the almond flour, baking powder, salt and cinnamon to the bowl and stir.
  4. In a separate bowl, beat the butter and erythritol until light and fluffy.
  5. Add the egg and vanilla to the butter mix and stir to combine.
  6. Add the dry ingredient mix and stir to form a nice sticky dough.
  7. Fold in the chocolate chips.
  8. Scoop the cookie dough into 2 tablespoon sized balls and place on the prepared sheet tray. Flatten the balls with your hand so they are about ½ inch thick.
  9. Bake the cookies for about 18-20 minutes until the edges are golden brown. Let cool on the tray before enjoying!
