- 2 large egg whites
- 1/4 cup So Nourished powdered erythritol
- 1/3 cup shredded unsweetened coconut
- 1/4 cup So Nourished monk fruit erythritol sweetener
- 1/2 teaspoon lemon extract
- Pinch salt
- Preheat the oven to 250°F and line a baking sheet with parchment.
- Beat the egg whites in a mixing bowl until foamy then add the salt and beat to soft peaks.
- While beating, add the erythritol a tablespoon at a time and beat to stiff peaks.
- Fold in the coconut, monk fruit sweetener, and lemon extract until just combined.
- Spoon the batter onto the baking sheet, spacing the mounds 1-inch apart, and flatten slightly.
- Bake for 2 hours then turn off the oven and let the cookies cool for 1 hour.
- Transfer the cookies to an airtight container to store.
