- 4 large egg whites
- 1/4 teaspoon cream of tartar
- 1 cup So Nourished powdered erythritol (divided)
- 1/2 teaspoon vanilla extract
- 2 large eggs (plus 2 yolks)
- 1/2 cup fresh lemon juice
- 6 tablespoons butter
- Preheat the oven to 200°F and line two baking sheets with parchment.
- Beat the egg whites and cream of tartar in a large mixing bowl on medium speed.
- Add ½ cup powdered erythritol and beat on high speed until stiff peaks form then beat in the vanilla.
- Spoon the egg whites into a piping bag and pipe onto the baking sheets in 2-inch discs.
- Pipe a second layer of egg white onto each disc, creating a nest in the middle.
- Bake for 1 hour 20 minutes then turn off the oven and let cool for 3 hours until dry.
- Combine the whole eggs, egg yolks, lemon juice, and the remaining erythritol in a medium saucepan over medium-low heat.
- Stir in the butter and cook until the mixture thickens.
- Strain the mixture through a mesh strainer into a medium bowl then cover with plastic touching the curd and chill until the meringues are dry.
- Spoon the lemon curd into the meringues and serve.
