- 1 cup almond flour
- 3/4 cup pecans ground to powder
- 1/4 teaspoon xanthan gum
- 1/4 cup butter softened
- 1 large egg
- 6 tablespoons So Nourished powdered erythritol
- 16 ounces cream cheese softened
- 1/4 cup So Nourished powdered erythritol
- 1/4 teaspoon stevia powder
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup sugar-free chocolate chips
- Preheat the oven to 350°F and lightly grease a square 8x8-inch baking pan with coconut oil.
- Stir together the crust ingredients until it forms a dough then press it into the bottom of the pan.
- Beat together the cream cheese, powdered erythritol, and stevia in a bowl until smooth.
- Add the eggs, one at a time, beating after each addition, then beat in the vanilla and fold in the chocolate chips.
- Spread the mixture over the crust and bake for 30 to 35 minutes until just set.
- Cool completely before cutting into 12 bars to serve.
