Low Carb Chocolatey Pie Goodness!

This rich dessert may feel like a cheat day, but it's far from it. If you are following a low-carb diet then this needs to be put at the top of the list of your go-to favorites. It's an excellent choice to enjoy yourself, but impressive enough to serve up to dinner guests. You've probably had ordinary chocolate pie, but now it's time to kick things up a notch.
When you are following a keto diet, a regular pie crust is not something that you can have. A traditional pie crust is full of carbs since it is usually made with white all-purpose flour. We have reimagined how to make a great pie crust and we know that you will be just as obsessed with our coconut crust as we are. Made using only stevia, coconut and butter, the three simple ingredients are pureed together and then pressed into the pie pan, making a tasty, sweet, coconutty crust that is completely low carb. Keep this recipe on hand for other pies because it is a total winner.
The whipped cream center is what makes this dessert extra fluffy and tasty. The cream cheese and sour cream make a nice tangy base which is then sweetened with powdered erythritol which melts completely into the mix. Unsweetened chocolate adds that rich chocolate taste that you are craving but keeps the carbs out of the equation. Be sure to use the vanilla extract as listed- it enhances the taste of the chocolate (again, without adding any calories).
Folding heavy cream into the chocolate mix makes the pie filling nice and fluffy. However, if you want a more dense, rich pie, skip the heavy cream and or the filing on to the pie crust without it. This will make a more dense, pudding style pie that's is even more decadent while still being totally keto. Whipped cream or no whipped cream, if you're all about the sinking your teeth into something scrumptious then this is the recipe for you! We've made it ourselves many times and it tastes just as good as it looks.

It may taste like you spent an entire evening in your kitchen, but the truth is only a few minutes stands between you and this delicious pie! Seriously, ten minutes of prep time is almost unheard of. Shh. We won't tell if you don't! This no-fuss recipe is exactly what you need when you want to indulge, but don't want to feel any of the guilt or put out any of the effort. The hardest part about it will be chilling the pie for three hours before serving. Trust us–it's worth the wait!

- 1/4 cup butter melted
- 1/4 teaspoon stevia powder
- 2 cups flaked coconut unsweetened
- 16 ounces cream cheese softened
- 1/4 cup sour cream
- 1/4 cup coconut oil
- 4 teaspoons vanilla extract
- 9 tablespoons So Nourished powdered erythritol
- 1/2 cup unsweetened cocoa powder
- 1 cup heavy whipping cream
- Preheat oven to 325°F.
- Combine the melted butter, stevia and flaked coconut in a food processor and blend together for about 15 seconds.
- Grease a pie plate with cooking spray and spread the coconut mixture evenly along the bottom and up the sides.
- Bake until the coconut crust is toasted and golden brown – about 8 to 12 minutes.
- While the crust cools, beat the cream cheese together with the sour cream, coconut oil, 1 tablespoon of vanilla extract, 8 tablespoons of erythritol, and cocoa powder.
- Beat on high speed until the mixture is light and fluffy.
- In a separate bowl, beat the whipping cream until soft peaks form then beat in the remaining erythritol and vanilla until stiff peaks form.
- Fold one-third of the whipped cream into the chocolate mixture then fold in the rest.
- Spread the mixture in the prepared crust then cover and chill for at least 3 hours before serving.
