- 4 cups almond flour
- 1/2 teaspoon baking soda
- 1/8 teaspoon salt
- 1/2 cup coconut oil (softened)
- 1/2 cup So Nourished Keto Pancake Syrup
- 1 tablespoon vanilla extract
- 12 to 15 drops liquid stevia extract
- 1/4 cup So Nourished granulated erythritol
- 3 tablespoons ground cinnamon
- Preheat the oven to 350°F and line two baking sheets with parchment.
- Whisk together the almond flour, baking soda, and salt in a bowl.
- In another bowl, stir together the coconut oil, So Nourished pancake syrup, vanilla, and liquid stevia extract until smooth.
- Stir in the dry ingredients until it forms a smooth dough, gathering it by hand if needed.
- Pinch off pieces of dough and roll them into 1-inch balls.
- Combine the granulated erythritol and ground cinnamon in a small bowl.
- Roll the dough balls in the erythritol and cinnamon mixture then place them on the baking sheet, spacing them 1 to 2 inches apart.
- Gently flatten the cookies and bake for 8 to 10 minutes until the edges are firm.
