Amazing Keto Cheesecake Popsicles
Popsicles are such a perfect summer treat. Eating a Popsicle can instantly cool your down on a hot day while also satisfying any craving for sugar that you may have. These tasty pops are completely free of regular old granulated sugar or corn syrup that is found in so many Popsicles. Instead, monk fruit sweetener is used to sweeten up these cheesecake Popsicles, making them even more delicious and completely keto-friendly!
Before talking more about our cheesecake Popsicle recipe, let’s take a look at the incredible monk fruit- the main sweetener used in this recipe. Monk fruit has actually been around for decades but has recently gained popularity since it has zero calories and is about 200 times sweeter than sugar. The monk fruit grows in Southeast Asia and has been used for centuries in traditional Chinese medicine as it is said to have strong antioxidants. In fact, the monk fruit gets its sweetness from those antioxidants which are separated from the fruit and pressed into juice to create a no-calorie sweetener that you can easily use in recipes like this. Pretty amazing, right?!
Now, back to these cheesecake Popsicles… In order to create a Popsicle that tastes like cheesecake, we had to start with a crust- every great cheesecake has a crust! Our crust is made with almond flour to keep with the low carb trend of this dessert. Almond flour also adds a rich, nutty component to these pops.
Cream cheese, yogurt, lemon juice, and vanilla are all blended together to create the “cheesecake” part of the pop. This creamy mix is so delicious, especially when frozen, that you will think you are eating a traditional, baked cheesecake. Add those fresh raspberries in and, wow! Pure Popsicle bliss!
By now, your mouth is probably watering, thinking about trying a keto cheesecake Popsicle but before you begin, we just want to point out one more thing. These Popsicles are made in a regular ice cube tray, just like the one you likely have at your house already! There is no need to buy a specialty Popsicle mold in order to make these pops! And, an ice cube tray makes adorable, small pops that are perfect for kids or if you just need a little something sweet. Of course, you can make them in a full-size Popsicle mold, just remember that the macros will increase as the size of the Popsicle increases.

Instructions
Stir together the almond flour, butter, and 2 tablespoons of granular monk fruit blend in a medium bowl.
Press about 2 teaspoons of the mixture into the bottom of each section in an ice cube tray.
In a large bowl, beat together the cream cheese, yogurt, lemon juice, and vanilla extract.
Add the remaining sweetener and beat smooth then spoon into the ice cube tray.
Top each piece with a fresh raspberry and insert a small Popsicle stick into each one.
Freeze for at least 2 hours until solid then use the Popsicle sticks to remove and serve.
