Kids absolutely love jello. It is sweet, it is a fun texture and most jello’s are incredibly colorful. However, do you know who else loves jello? Adults. Especially adults who are on a low carb, keto diet and are restricted from regular old packaged jello. Yet our version on this classic treat is sooo much better than any jello you could ever buy in the store. Let us explain…

To begin, I’d like to point out that our mixed berry gelatin salad does, in fact, utilize a box of jello mix. But we truly take it to the next level with everything else we add- it is not just a boring box of jello! To start, this recipe uses fresh, homemade whipped cream to lighten the dish and add a rich, velvety flavor. Yet, we thought that we should take it even further, making this gelatin even creamier by adding cream cheese. This, of course, will also help you reach your fat intake goals if you are following a keto diet- this gelatin salad is loaded with great fats!

Low Carb Mixed Berry Gelatin Salad

While many popular boxes of gelatin are fruit-flavored, none have real fruit mixed in! We chose a blend of keto-approved berries to go into this salad, increasing the nutrition and the taste. By mashing the softer berries, they are able to blend into the mix even more, adding fresh berry flavor to every bite.

Shredded coconut lends even more layers of flavor, texture, and beneficial fats to the gelatin. Coconut also adds protein, iron, and phosphorous which are all just great bonuses. Even unsweetened shredded coconut will add a natural sweet flavor which you will definitely enjoy!

Now, regular jellos are full of sugars which we all know are not very healthy. Our recipe utilizes sugar-free gelatin mix and powdered erythritol in addition to the natural saccharinity of the berries and coconut. This keeps this whole dessert low carb and keto-friendly while still being a truly delicious dessert.

Now, you may have looked at the name of this recipe, mixed berry gelatin salad, and thought that it would be a recipe for something more lunch worthy, as many “salads” are. Well, you can definitely have this for lunch! Or maybe breakfast? Or just as a snack. No matter when you want to enjoy this gelatin mix, go right ahead! Ingredients
  • 1 cup heavy cream
  • 2 teaspoons vanilla extract
  • 1 tablespoon So Nourished powdered erythritol
  • 8 ounces cream cheese softened
  • 1 cup 4% fat cottage cheese
  • 1 .6 oz box sugar free strawberry or raspberry gelatin
  • 1 cup finely chopped strawberries
  • 1/2 cup fresh raspberries slightly mashed
  • 1/2 cup fresh blackberries slightly mashed
  • 1/2 cup shredded unsweetened coconut
  • 1/4 cup fresh sliced strawberries
Instructions
  1. Beat the heavy cream, powdered erythritol and vanilla in a large bowl on high speed until stiff peaks form.
  2. Fold in the cream cheese then carefully stir in the cottage cheese and sugar-free gelatin.
  3. Stir in the berries and shredded coconut then cover and chill for at least 4 hours.
  4. Garnish with fresh sliced strawberries to serve.
