- 1 cup peanut butter
- 2 tablespoons pumpkin puree
- 2 tablespoons cream cheese (softened)
- 1 teaspoon vanilla extract
- 1/3 cup So Nourished monk fruit erythritol sweetener
- 2/3 cup coconut flour
- 1/2 teaspoon pumpkin pie spice
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 large egg
- Preheat the oven to 350°F and line a baking sheet with parchment.
- Whisk together the peanut butter, pumpkin, cream cheese, and vanilla extract.
- In a separate bowl, whisk together the monk fruit sweetener, coconut flour, pumpkin pie spice, baking powder, and salt.
- Whisk the dry ingredients into the wet along with the egg and stir until it comes together in a dough.
- Pinch off pieces of the dough and roll into small balls.
- Place the balls on the baking sheet about 2 inches apart then flatten with a fork.
- Bake for 12 to 14 minutes until just browned.
- Dust with monk fruit sweetener and ground cinnamon to serve.
