Irresistible Keto Truffles
Chocolate and peanut butter have to be one of the all-time greatest combinations in the world. Now that you are following a low carb diet, your first inclination may be to stay away from this wonderful flavor combination as it typically is high in carbs. However, there is no need to shy away from chocolate and peanut butter, just use this recipe to make a perfect low carb dessert that will satisfy your craving for peanut butter and chocolate while sticking to your low carb diet. There is a way!
The first trick to making these truffles is the coconut flour that is mixed into the filling. When you start to use peanut butter that is less processed, has no additional added sugars, and is essentially just ground peanuts, you may notice how soft it is. In fact, it can be quite liquidy which can make it a little tricky to work with. That is when coconut flour comes in to play.
Adding coconut flour to the peanut butter filling will help solidify the filling, thickening it while still remaining low carb. The flour absorbs some of the peanut oil and makes the filling much stiffer and easier to work with. You can also use almond flour in place of coconut flour however it will not give the filling as much structure. Since almond flour is already quite full of oil, it cannot absorb as many extra fats as coconut flour can. It will still thicken the peanut butter slightly though so go ahead and give it a try if you prefer almond flour over coconut flour. We also just like the taste that the coconut flour adds to the truffles. It gives them a little more of a complex taste than if you use almond flour since almond flour is just another nut and you already are using peanuts!
The next key to this recipe is the dark chocolate chips. When making any kind of low carb recipe that calls for chocolate, you always want to choose a dark chocolate, preferably one that is labeled 70% or higher. This percentage tells you how much cocoa is in the chocolate. A higher percentage means more cocoa and less added milks and sugars. That also equates to fewer carbohydrates.
The brand Lily’s is quite good and offers a wider range of dark chocolates that are very low in carbs. Lily's is dark chocolate that has been sweetened using erythritol so it tastes like regular, sweetened chocolate but has none of the carbs. Lily's comes in an array of chocolate options as well ranging from dark to milk and even a white chocolate version. They all taste great, are versatile in baking and you can typically find them in the grocery store for a reasonable price. If you can’t find this brand, opt for the darkest chips you can find! They will have the most intense chocolate flavor and be the lowest carb.

- 1 1/2 cups all natural peanut butter unsweetened
- 1 cup coconut flour
- 1/4 cup So Nourished powdered erythritol
- 1/8 tsp salt
- 2 cups Lily's dark chocolate chips melted
- 1 tbsp coconut oil melted
- In a large bowl, combine the peanut butter, coconut flour, erythritol and salt. Mix well until smooth.
- Line a flat sheet tray or plate with parchment paper or a silicone mat. Then use a small cookie dough scoop or a tablespoon to scoop the peanut butter batter onto the lined tray.
- Place the tray of peanut butter balls in the freezer for at least one hour or until firm.
- Before you remove the peanut butter balls from the freezer, make the chocolate coating. Add the coconut oil and melted chocolate to a medium sized bowl and gently stir together.
- Use a fork to dip each frozen peanut butter ball into the chocolate mix, enrobing the balls completely in chocolate. You may need to reheat the chocolate mix if it begins to get to thick.
- Allow the chocolate to harden before serving.
