- 4 ounces chopped dark chocolate (90% cacao)
- 1 1/2 teaspoons butter
- 1/2 cup coconut oil (softened)
- 3/4 cup So Nourished powdered erythritol
- 1 tablespoon heavy cream
- 2 teaspoons peppermint extract
- 1 teaspoon vanilla extract
- Line two baking sheets with parchment and set them aside.
- Melt the dark chocolate and butter in a double boiler over medium-low heat.
- When the chocolate is melted, stir smooth and keep warm.
- Beat the coconut oil with the erythritol until smooth then beat in the heavy cream plus the peppermint and vanilla extracts.
- Spoon the peppermint mixture onto the baking sheets in mounds using a tablespoon – you should get about 16 of them.
- Flatten the mounds slightly then freeze for 15 minutes or until firm.
- Dip the peppermint mounds in the melted chocolate and place them back on the baking sheet.
- Chill until the chocolate is hardened then store in the fridge.
