Make Low Carb Ice Cream at Home
There is nothing quite like homemade ice cream. It is just so much more flavorful than anything you can buy in the store. Homemade ice cream is also not very difficult to make. It does take a little practice but after you have made this recipe once or twice, you will have it down. Then, your freezer will be full of incredible homemade ice cream all summer long! Of course, it will also be keto homemade ice cream- even better!
Keto ice cream is a little trickier to make than regular ice cream. There are a few extra steps you need to take in order to ensure the ice cream stays smooth and creamy rather than getting icy or hard. One of the tricks to making our keto ice cream so perfect is the gelatin we add. Gelatin does a few things in ice cream. Gelatin acts as a stabilizer for the ice cream. It helps the ice cream hold its shape, even when it starts to get a little warm. Gelatin will keep your raspberry ice cream looking like, well, ice cream!
Gelatin also prevents ice crystals from forming in the ice cream. When water crystals form, ice cream gets icy and hard. Lots of homemade ice cream recipes end up too firm and not creamy enough. By adding gelatin to the mix, the ice crystals don’t form as freely and your ice cream stays smooth. If you want a perfectly textured keto ice cream, gelatin is a must!
Be sure to use unflavored, unsweetened gelatin powder. You don’t want to add sugar to your ice cream by mistake! You can find unflavored gelatin in the grocery store right near the Jell-O. It doesn’t cost much and it is key to ice cream success!
The rest of the ingredients in our ice cream recipe are also low carb and keto approved. So Nourished powdered erythritol is the best sweetener for ice cream that we have found. It blends into the ice cream perfectly with no gritty texture. It is also completely natural and has no chemical aftertaste. The real, sweet flavor is important when crafting the perfect ice cream!
Raspberries are one of the best keto fruits out there. One cup of raspberries is only 7 net carbs which is incredibly low for a fruit. We also love that raspberries have such a strong flavor. You don’t need many berries in order to make flavorful ice cream. Use fresh raspberries if possible, as they are usually sweeter than their frozen counterparts. However, if it’s not raspberry season and you are craving a big bowl of raspberry ice cream, the frozen berries will do!
After you have made the delicious ice cream base and frozen the ice cream in your ice cream maker, let it chill in the freezer a little longer. This helps the ice cream get firm and scoopable. When it is straight out of the ice cream machine, it can be a little too soft. Waiting that extra time will seriously improve the texture.
Scoop yourself a big bowl of this delicious homemade keto ice cream. It is the perfect treat to enjoy at the end of a long day. It is also a great dessert for the middle of a hot day. Heck, why not just have a bowl for breakfast?! Enjoy it whenever- it is too good to keep in the freezer for long!

- 2 cups heavy cream
- 1 cup raspberries (fresh or frozen)
- 1/2 cup So Nourished powdered monk fruit erythritol sweetener
- 1 tsp unflavored gelatin powder
- 1/4 cup water
- 1/2 tsp vanilla extract
- Place the gelatin and water in a small bowl, mix and let bloom for 5 minutes. The gelatin will absorb all the water.
- Place the bloomed gelatin and the remaining ingredients in a blender and puree until very smooth.
- Pour the mix into the bowl of your ice cream maker and churn the ice cream according to the manufacturer's directions.
- Place the churned ice cream into an airtight container, cover and freeze for at least 2 hours to get the ice cream nice and firm.
- Scoop into bowls and serve with your favorite keto whipped cream.
