- 1 1/2 cups heavy cream (divided)
- 1 tablespoon powdered gelatin
- 1/2 cup So Nourished granulated erythritol
- 1 vanilla bean
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- Pinch ground nutmeg
- Pinch ground cloves
- 1 cup fresh cranberries
- 1 cup water
- 1/3 cup So Nourished powdered erythritol
- 2 1/2 tablespoons orange juice
- Warm ½ cup of the heavy cream in a medium saucepan.
- When steaming, sprinkle in the gelatin and let rest for 3 minutes before adding the remaining cream and the granulated erythritol.
- Split the vanilla bean and scrape the seeds into the cream mixture and stir well.
- Cook over medium heat, stirring constantly, until steaming – do not boil.
- Remove from heat and stir in the milk, vanilla extract, cinnamon, nutmeg, and cloves then divide among 6 dessert cups.
- Cover with plastic and chill for 3 to 4 hours until the custard is set.
- Meanwhile, combine the cranberries, water, and powdered erythritol in a small saucepan.
- Bring to a simmer over medium heat and cook for 8 to 10 minutes until the cranberries start to burst.
- Stir in the orange juice then pour into a food processor and puree until smooth.
- Strain the mixture through a fine mesh sieve then spoon over the panna cottas to serve.
