Easy Keto Mug Cake

Mug cakes are somewhat of a dessert miracle. They allow you to have a fresh, delicious, homemade dessert in just a few minutes. When following a keto diet, you may not be able to enjoy many fruits. Most fruit is naturally very high in sugar content. As you know, keto is all about reducing sugars and eliminating carbs which means lots of fruits are off-limits. Luckily, berries are the exception to this rule! While berries do still contain carbs and natural sugars, they are much lower than in other fruits. Of course, berries still taste nice and sweet so you can get that sugary taste you crave without all the actual carbohydrates.

Low Carb Strawberry Mug Cake

We used strawberries in this keto mug cake recipe as they have one of the lowest carb counts out of all the berries. That means you can use more strawberries while still staying in your dietary limits. Strawberries are also available year-round in most grocery stores, getting more abundant in the spring and summer when they start to be in season.

You can definitely use frozen strawberries if you do not have fresh berries on hand. Just count out five of the berries, thaw briefly (a few seconds in your microwave will do!), and then puree them in a food processor or blender. You do not need to strain the berries as the texture of the cake will mask any seeds that may be in the puree.

Keto Strawberry Mug Cake

Our mug cake recipe uses a blend of coconut flour and almond flour which we believe makes this cake have the perfect texture. Keto baked goods made exclusively with almond flour have a tendency to be a bit more crumbly while using only coconut flour has the opposite effect, making cakes gummy and dense. Combining the power of the two flours creates the perfect texture that you are going to love!

Feel free to double this recipe or even cut it in half for times when you want just one fresh cake. However, we do recommend eating it right away while it is warm out of the microwave. It can get a little tough if you try to store it for more than a day. Yet with a recipe this easy, there is no need to prepare the mug cake in advance since you only need a minute to make it fresh from scratch! Instructions
  1. Place the butter in a medium sized microwave safe bowl. Microwave for about 20 seconds to melt.
  2. Add the remaining ingredients to the bowl with the butter and stir well to make a smooth batter.
  3. Pour the batter into two microwave safe mugs and then microwave one mug at a time for 90 seconds. The cake should spring back when touched.
  4. Allow to cool for one minute then enjoy with your favorite keto chocolate sauce, whipped cream or on it’s own!
