- 250 grams finely diced rhubarb
- 250 grams iced strawberries
- 1/3 cup water
- 1/2 cup So Nourished granulated erythritol
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 2 large eggs (separated)
- 1/4 cup heavy cream
- Combine the rhubarb, strawberries, and water in a large saucepan and bring to a boil over medium-high heat.
- Reduce heat and simmer on medium until tender, about 5 minutes.
- Stir in the erythritol, vanilla, cinnamon, and salt and simmer until the sweetener dissolves.
- Remove from heat and blend using an immersion blender until smooth and pureed.
- Whisk the egg yolks in a large bowl until creamy then spoon in a few tablespoons of the hot rhubarb mixture while whisking.
- Add another few tablespoons while whisking then pour the mixture back into the saucepan and whisk until well combined.
- Heat over medium heat, whisking constantly, for 3 to 5 minutes until thickened then remove from heat and chill for at least 30 minutes.
- Pour the heavy cream into a bowl and beat to stiff peaks.
- Beat the egg whites in a separate bowl to stiff peaks then fold into the chilled rhubarb mixture.
- Fold in the whipped cream until well combined then spoon into cups and chill before serving.
