Instructions
  1. Combine the rhubarb, strawberries, and water in a large saucepan and bring to a boil over medium-high heat.
  2. Reduce heat and simmer on medium until tender, about 5 minutes.
  3. Stir in the erythritol, vanilla, cinnamon, and salt and simmer until the sweetener dissolves.
  4. Remove from heat and blend using an immersion blender until smooth and pureed.
  5. Whisk the egg yolks in a large bowl until creamy then spoon in a few tablespoons of the hot rhubarb mixture while whisking.
  6. Add another few tablespoons while whisking then pour the mixture back into the saucepan and whisk until well combined.
  7. Heat over medium heat, whisking constantly, for 3 to 5 minutes until thickened then remove from heat and chill for at least 30 minutes.
  8. Pour the heavy cream into a bowl and beat to stiff peaks.
  9. Beat the egg whites in a separate bowl to stiff peaks then fold into the chilled rhubarb mixture.
  10. Fold in the whipped cream until well combined then spoon into cups and chill before serving.
