- 3 cups unsweetened coconut milk beverage
- 5 tablespoons So Nourished powdered erythritol
- Pinch xanthan gum
- 1/3 cup vanilla whey protein powder (40g)
- 1 tablespoon cocoa butter (melted)
- 1/2 cup shredded unsweetened coconut
- 1/4 cup toasted coconut flakes
- Whisk together the unsweetened coconut milk, erythritol, and xanthan gum in a small saucepan over medium heat.
- Heat until the erythritol is dissolved and simmer until reduced by half – about 1 hour.
- Whisk in the vanilla protein powder then set aside to cool for 15 minutes.
- Stir the melted cocoa butter into the condensed mixture then stir in the shredded coconut.
- Spread the mixture on a parchment-lined baking sheet then sprinkle with toasted coconut flakes.
- Freeze until firm then cut into pieces to serve.
