When you choose to go on a keto diet, you are starting a super healthy, exciting way of eating that still allows you to enjoy a lot of your favorite recipes. However, what if you also want to follow a vegetarian diet? Is it possible to enjoy a low carb and vegetarian meal? Well, I think these 24 recipes will prove that it is!
There are so many delicious keto dinner recipes out there, but for this post, I thought we should switch it up a bit by including some of the meatless options for you. Maybe you're vegetarian or it's one of those days where you just don't feel like eating meat, maybe you're trying to lower your animal protein consumption. Whatever the case may be, I think there is something on this list for everyone to enjoy. I have rounded up some of the best vegetarian recipes that are also keto-friendly, giving you lots of options to choose from so that your keto diet and your vegetarian diet will both be a success.
Obvious choices for a meatless meal are soups and salads (and I have included a few of those here. As a vegetarian, you likely have a lot of soup and salad recipes already on hand- they always seem to be the staples! We have added a few of those classic favorites to the list to give you some new keto options to add to your list of favorites. Cauliflower bisque may be my favorite soup as it is really creamy and filling while still being totally low carb. The spicy Thai salad is a great way to liven up your lunch, giving it a tasty kick of flavor without adding any meat or carbs to your diet. Curried squash soup is another one that you must try especially on a colder day when you need a bowl of something warm to keep you cozy.
You'll see from this list that the possibilities are way beyond just soup and salad! Some of my favorite meals happen to be meatless – just because its meatless doesn't mean it has to be mediocre! There are tons of amazing options in this roundup that prove that meat is not necessary. Penne all Vodka cauliflower casserole is one dish that is definitely a crowd-pleaser. It has everything a traditional Italian meal would include without all the carbs. Low carb tofu satay is one that is perfect for both lunch and dinner. Make a lot of that recipe at dinner time and then enjoy it at lunch the next day- it reheats really well!
Please note that many of the recipes listed here do contain dairy products so they may not fit into a vegan lifestyle. however, none of them contain meat or lots of carbs. Some on the list are vegan though so definitely take a look! You can also make a few substitutions to transform the recipes into a vegan meal. Olive oil in place of butter, unsweetened almond milk in place of cream and you are good to go!
