Ingredients
  • 1 1/2 pounds ground beef (80% lean)
  • 1 1/2 pound ground pork
  • 1 medium yellow onion (chopped)
  • 2 cloves minced garlic
  • 1/4 cup fresh chopped parsley
  • 2 tablespoons fresh chopped basil
  • 8 slices bacon (uncooked)
  • salt and pepper
Instructions
  1. Preheat the oven to 350°F then line a baking sheet with foil and grease with cooking spray.
  2. Combine the ground beef, ground pork, onion, garlic, parsley, and basil in a bowl.
  3. Stir until well combined then season with salt and pepper.
  4. Shape the mixture into a loaf shape by hand and wrap with slices of bacon.
  5. Place the meatloaf on the baking sheet and bake for 50 to 55 minutes until cooked through.
  6. Let the meatloaf rest for 10 minutes then slice to serve.
