- 1 tablespoon olive oil
- 1 medium yellow onion diced
- 8 ounces sliced mushrooms
- 2 medium zucchini sliced or diced
- salt and pepper
- 1 pound ground pork
- 1/2 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 2 tablespoons Dijon mustard
- Heat the oil in a large skillet over medium-high heat.
- Add the onions and mushrooms and sauté for 3 to 4 minutes until browned.
- Stir in the zucchini then season with salt and pepper.
- Cook for 3 to 4 minutes until zucchini is tender then push the veggies to the sides of the skillet.
- Add the ground pork to the middle of the skillet and stir in the garlic powder and onion powder.
- Cook until the meat is browned, breaking it up with a wooden spoon.
- Once the meat is browned, stir in the cooked veggies and the Dijon mustard
- Adjust seasoning to taste and serve hot.
