Easy, One Pan Chicken Dinner

Okay, veggie lovers, this one is for you! If roasted vegetables are your weakness then this recipe is sure to become your new favorite. Just imagine a beautiful tray of low carb vegetables perfectly roasted to make a delicious, healthy, and incredibly easy meal. That is what this rainbow chicken is all about.

To begin, you will need to get out your cutting board and favorite knife as there are quite a few vegetables to chop. This dish contains broccoli, zucchini, bell peppers, red onions, and cherry tomatoes. Do you see why this is called rainbow chicken? We have all of the colors of the rainbow included in this dish in vegetable form!

Low Carb Rainbow Chicken

Once the vegetables are chopped, they are arranged on a sheet tray along with the chicken breast pieces. Simple seasonings are sprinkled on top to bring a little bit of Italian flair to the dish. Then, everything goes into the oven to roast. It is as simple as that! Aren’t one-pan dishes the best?

While we all know vegetables are an important part of the diet, you may not know the details about why this is so. Well, to begin, all veggies are full of nutrients. If you are looking to eliminate even more carbs from this recipe, skip the chopped carrots and opt for an orange bell pepper to replace that pretty color!

Eating a diet that is rich in vegetables will help your body function properly, keeping you healthy and strong. Consuming a variety of colorful foods has also been proven to be a huge benefit. With each different color, you are getting a concentrated amount of a certain nutrient. Orange foods tend to be higher in vitamin C while red foods are full of phytochemicals that have been shown to help fight cancer. Green veggies are rich in lutein and vitamin K which are imperative for blood and bone health and purple foods have anti-aging properties. Seems like it is a fantastic idea to eat the rainbow!

Ingredients
  • 2 boneless, skinless chicken breasts cut into one inch pieces
  • 1 cup broccoli florets
  • 2 cups sliced carrots
  • 1 red onion chopped into one inch pieces
  • 1 1/2 cups cherry tomatoes halved
  • 1 yellow bell pepper chopped into one inch pieces
  • 1 medium zucchini chopped
  • 2 cloves minced garlic
  • 1 tbsp dried Italian seasoning
  • 1/2 tsp paprika
  • 1/2 tsp ground black pepper
  • 1 tsp salt
  • 2 tbsp olive oil
Instructions
  1. Prepare a sheet pan by lining it with foil.
  2. Preheat your oven to 425 degrees F.
  3. Place the chicken on one end of the pan then add the tomatoes next to the chicken, followed by the carrots, bell pepper, zucchini, broccoli and onion. Adding the ingredients in this order will make a rainbow, however, you can also opt to simply add all the veggies and chicken to the tray and toss together.
  4. Sprinkle the veggies and chicken with all the spices then drizzle with the olive oil.
  5. Place the tray in the oven and bake for 20 minutes. The veggies should be slightly charred and the chicken will be golden browned and tender.
  6. Serve while hot!
