Low Carb Slow-Cooker Mexican Chicken Soup

While this soup certainly has a complex flavor, it's definitely easy to make. The recipe only requires five ingredients, all of which you probably have on hand already! There are a few variations you can use as well, in case you do not have a specific ingredient in your kitchen. Chicken breasts can easily be used in place of chicken thighs. You can even use a sirloin steak or pork chops in place of the chicken to give the soup a whole new taste. If you do not have chunky salsa, use tomato puree or chopped fresh tomatoes with some chopped onion. A Mexican blend cheese is also perfect if pepper jack cheese is not available. So many great ways to make this soup that you definitely have to try it right now!

We also love to switch up the toppings on this soup, adding some flavorful and pretty garnishes. Chopped cilantro, fresh lime slices, and a dollop of extra sour cream are all great ways to finish off this soup. When you add a garnish to the Slow-Cooker Mexican Soup, it really makes the dish look complete and like a meal you spent hours planning and cooking. We won't tell anyone that the whole recipe only took a few minutes to put together!

Slow cookers are great because even the most standard machine has a high and low heat setting. If you're in more of a hurry, click the slow-cooker to “high temperature” and you can enjoy this scrumptious dish in as little as three hours! However, you have the time, and you want an even more marinated flavor, opt for “low temperature” and the soup will be done in six to eight hours. I love to throw everything in the slow cooker in the morning before I head to work. I set the temperature to low and, when I get home, dinner is already done! No matter how or when you cook this recipe, you are definitely going to love the yummy flavor of this ultimate low carb comfort food. You will also love the simplicity of the recipe in general.

The tender chicken coupled with the melted cheese and chunky salsa is just what you need to satisfy your appetite. Don't settle for a second-rate dinner when you can serve up this amazing meal with as little effort as calling up for takeout. You'll love the flavor and appreciate the fact that this low-carb dish is healthy and nutritious! Try it tonight to see what the fuss is all about.
