- 1 pound mild Italian sausage (ground)
- 3 ounces almond flour
- 6 ounces shredded mozzarella cheese
- 1 large egg
- 1 teaspoon onion powder
- salt and pepper
- Divide the sausage into six equal portions and shape each one into an oblong shape.
- Fry the sausages in a skillet over medium-high heat until browned on all sides and cooked through.
- Combine the almond flour and mozzarella cheese in a microwave-safe bowl.
- Heat on high heat for 1 minute then stir and cook for another 30 seconds.
- Stir in the egg, onion powder, salt, and pepper until it forms a dough.
- Roll the dough out between two pieces of parchment into a thin rectangular shape.
- Cut the dough into six pieces and wrap one piece around each sausage then cut into 3 smaller pieces.
- Place the sausage rolls on a parchment-lined baking sheet.
- Bake for 12 to 15 minutes at 425°F until golden brown then serve hot.
