- 4 cups chopped broccoli
- 1 tablespoon olive oil
- 1 small yellow onion (chopped)
- 8 ounces sliced mushrooms
- salt and pepper
- 3 cups cooked chicken thighs (shredded)
- 1 cup chicken broth
- 1 cup heavy cream
- 2 large eggs
- Preheat the oven to 350°F and lightly grease a 9-inch square baking dish with cooking spray.
- Fill a saucepan with 1 inch of water then add a steamer insert.
- Add the broccoli to the insert then cover and bring the water to boil.
- Steam the broccoli for 6 to 8 minutes until bright green then drain and set aside.
- Heat the oil in a medium skillet over medium-high heat.
- Add the onions and sauté for 3 to 4 minutes then stir in the mushrooms and season with salt and pepper.
- Sauté for 3 to 4 minutes until browned then remove from heat.
- Spread the cooked broccoli in the prepared dish with the cooked onions and mushrooms.
- Sprinkle with shredded chicken then season with salt and pepper.
- Whisk together the remaining ingredients and pour into the casserole dish.
- Bake for 35 to 40 minutes until hot and bubbling. Let rest 10 minutes before serving.
