  • 1 tablespoon butter
  • 1 medium yellow onion chopped
  • 1 medium green pepper chopped
  • 3 medium stalks celery diced
  • 12 ounces tuna canned in oil drained and flaked
  • 1 cup mayonnaise
  • 3/4 cup grated parmesan cheese
  • 6 ounces fresh baby spinach
  • 2 tablespoons olive oil
  • salt and pepper
Instructions
  1. Preheat the oven to 400°F and lightly grease a small casserole dish.
  2. Heat the butter in a skillet over medium-high heat.
  3. Add the onions, bell peppers, and celery and sauté for 4 to 5 minutes until tender.
  4. Season with salt and pepper then stir in the tuna, mayonnaise, and parmesan.
  5. Spoon the mixture into the casserole dish and bake for 15 to 20 minutes until browned on top.
  6. Toss the spinach with the olive oil and serve the casserole over it.
