- 4 large zucchinis
- 1/2 cup crumbled feta cheese
- 1/4 cup cottage cheese
- 6 tablespoons mayonnaise
- 1 large egg
- 4 green onions (sliced thin)
- 2 cloves minced garlic
- 1 teaspoon dried oregano
- salt and pepper
- Slice the zucchini as thin as possible then sprinkle with salt and set aside for 30 minutes to drain.
- Preheat the oven to 350°F and grease an 8x8-inch square baking dish with cooking spray.
- Rinse the zucchini and pat dry then place it in a large bowl.
- Toss in the feta cheese, cottage cheese, mayonnaise, egg, and green onion.
- Sprinkle with garlic, oregano, salt and pepper then toss to combine.
- Spread in the baking dish and bake for 35 to 40 minutes until hot and bubbling.
