Ingredients
  • 1 1/2 cups broccoli florets
  • 1 tablespoon butter
  • 1 pound boneless chicken thighs (chopped)
  • 1 small yellow onion (diced)
  • 2 cloves minced garlic
  • 1 cup chopped spinach
  • 1/2 cup heavy cream
  • salt and pepper
  • 3 large zucchini (spiralized or peeled into noodles)
Instructions
  1. Fill a saucepan with 1 inch of water then add a steamer insert.
  2. Add the broccoli to the insert then cover and bring the water to boil.
  3. Steam the broccoli for 6 to 8 minutes until bright green then drain and set aside.
  4. Melt the butter in a large frying pan over medium-high heat then add the chicken.
  5. Cook for 3 to 4 minutes, stirring often until the chicken starts to brown then add the onion and garlic.
  6. Sauté for another 2 to 3 minutes then stir in the spinach and broccoli.
  7. Pour in the cream then season with salt and pepper and stir well.
  8. Cook for 5 minutes until everything is cooked through then spoon into a serving bowl.
  9. While the mixture is cooking, heat another large skillet over medium heat and grease with cooking spray.
  10. Add the zucchini noodles and sauté for 4 to 5 minutes until just tender.
  11. Spoon the chicken broccoli alfredo over the zucchini noodles to serve.
