- 1 tablespoon coconut oil
- 1/2 medium yellow onion (diced)
- 3 cloves minced garlic
- 8 ounces ground chorizo sausage
- 1 cup thinly sliced cabbage
- 1/2 cup diced celery
- 1/2 cup diced tomatoes
- 2 1/2 cups beef broth
- 1 teaspoon chili powder
- 1/2 teaspoon paprika
- 1 tablespoon butter
- 4 large eggs
- salt and pepper
- Heat the coconut oil in a Dutch oven over medium-high heat.
- Add the onion and sauté for 3 minutes then stir in the garlic and cook 2 minutes more.
- Crumble the chorizo into the Dutch oven then add the celery and cabbage.
- Stir in the tomatoes, beef broth, and seasonings then bring to a boil.
- Reduce heat and simmer for 20 minutes.
- Meanwhile, melt the butter in a large skillet over medium heat.
