Just be sure the seasoning mix that you buy doesn't have any sugar added- we want to keep the recipe keto-friendly!
You can also use a cup of fresh chopped tomatoes in place of the crushed canned tomatoes if needed. Be sure to just use the cup of tomatoes as directed in the recipe- too many may also throw off the keto balance. Another simple, low carb substitute that we have used in this dish is to replace the ground beef with ground turkey or ground chicken. - 1 1/2 pound ground beef (80% lean)
- 1 cup crushed tomatoes (from a can)
- 1 tablespoon chili powder
- 1 tablespoon ground cumin
- 1 teaspoon paprika
- salt and pepper
- 2 cups shredded pepper-jack cheese
- 1 jalapeno (seeded and sliced thin, optional)
- 1 cup sour cream
- 2 scallions (sliced thin)
- Preheat the oven to 400°F and lightly grease a 9-inch square baking dish with cooking spray.
- Cook the ground beef in a large skillet over medium-high heat until browned.
- Stir in the crushed tomatoes and seasonings then simmer for 5 minutes.
- Season the mixture with salt and pepper to taste then spread in the baking dish.
- Sprinkle with shredded cheese and jalapenos, if using, then bake for 15 to 20 minutes until the cheese is melted and browned.
- Serve hot with sour cream and sliced scallions.
