Ingredients
  • 2 tablespoons butter (melted)
  • 2 tablespoons olive oil
  • 1 tablespoon minced garlic
  • 1 tablespoon grated ginger
  • 1 tablespoon orange zest
  • 1/2 to 1 teaspoon red chili flakes
  • 1/2 teaspoon ground cloves
  • 3 to 4 tablespoons So Nourished granulated erythritol
  • 1 (4-pound) boneless pork tenderloin
  • salt and pepper
Instructions
  1. Combine the butter, olive oil, garlic, and ginger in a small bowl.
  2. Stir in the orange zest, chili flakes, and cloves then sweeten with the granulated erythritol.
  3. Season the pork with salt and pepper then rub the spice mixture all over it.
  4. Wrap in plastic and refrigerate overnight then bring to room temperature before cooking.
  5. Preheat the oven to 400°F and place the pork on a roasting pan.
  6. Bake for 15 minutes then reduce heat to 320°F and bake for another 1 ½ to 2 hours, or until the internal temperature reaches 135°F.
  7. Remove the pork to a cutting board and let rest for 15 minutes before slicing to serve.
