- 1 cup full fat Greek yogurt plain
- 1 tablespoon fresh lemon juice
- 1 tablespoon olive oil
- 2 cloves minced garlic
- 1/2 cup finely diced cucumber
- 1 tablespoon fresh chopped dill
- salt and pepper
- 1 1/2 pounds boneless lamb shoulder cut into chunks
- 2 tablespoons fresh chopped rosemary
- 1 1/2 tablespoons fresh chopped mint
- 1 1/2 tablespoons fresh chopped parsley
- 1 teaspoon fresh chopped oregano
- Whisk together the yogurt, lemon juice, olive oil, and garlic in a medium bowl.
- Stir in the cucumber and dill then season with salt and pepper and chill.
- Combine the lamb, rosemary, mint, parsley, and oregano in a large bowl.
- Season with salt and pepper and toss to coat.
- Cover and chill for at least 2 hours then thread onto skewers.
- Preheat the grill to medium-high heat then place the kebabs on the grill.
- Cook for 8 to 10 minutes, turning as needed, until done to your liking.
- Let the kebabs rest for 5 minutes then serve with the yogurt sauce.
