- 1 1/4 pound pound pork medallions
- 1 tablespoon butter
- 1/4 cup diced yellow onion
- 1/2 cup thinly sliced apple
- 1 teaspoon So Nourished powdered erythritol
- 1/2 teaspoon ground cinnamon
- salt and pepper
- Preheat the grill to medium heat and brush the grates with oil.
- Season the pork with salt and pepper then add to the grill.
- Grill for 18 to 20 minutes until well charred then turn the pork medallions.
- Let the pork cook for another 15 to 20 minutes until no longer pink in the middle.
- During the last 15 minutes of cooking, heat the butter in a skillet over medium heat.
- Add the diced onion and cook for 3 minutes, stirring often, until browned.
- Add the sliced apples in a single layer then sprinkle with erythritol and cinnamon.
- Cook the apples for 5 to 6 minutes, stirring occasionally, until just tender.
- Serve the fried apple and onion mixture over the pork medallions.
