- Place the cauliflower in a food processor and pulse into rice-like grains.
- Heat the oil in a medium skillet over medium heat.
- Add the onion, jalapeno, and garlic then sauté for 3 to 4 minutes until the onion is translucent.
- Stir in the tomatoes, peppers, cumin, paprika, and salt then simmer for 5 minutes.
- Add the cauliflower rice and stir well then sauté for 3 to 4 minutes until tender. Serve hot.
