- 3/4 cup almond flour
- 4 ounces cream cheese softened
- 4 large eggs whisked
- 1/4 cup unsweetened coconut milk
- Pinch salt
- Cooking spray
- 1/2 cup Dijon mustard
- 1 pound thinly sliced smoked turkey
- 8 slices provolone cheese
- Combine the almond flour, cream cheese, eggs, and coconut milk in a blender.
- Add a pinch of salt and blend until smooth and well combined.
- Heat a large skillet over medium-low heat and grease with cooking spray.
- Spoon in a few tablespoons of batter and swirl the pan to spread.
- Cook until the edges are firm then loosen the crepe and carefully flip it.
- Let the crepe cook until the underside is just browned then remove to a plate and repeat with the remaining batter.
- Lay the crepes out flat and spread with mustard.
- Layer the sliced turkey over the crepes and top with provolone cheese.
- Roll up the crepes tightly and cut each into slices to serve.
