Ingredients
  • 2 teaspoons olive oil
  • 1/2 small yellow onion (diced)
  • 1 clove minced garlic
  • 1 (14-ounce) can diced tomatoes
  • salt and pepper
  • 1 cup whole milk ricotta cheese
  • 1/4 cup shredded mozzarella cheese
  • 1/4 cup shredded parmesan cheese
  • 1 large egg
  • 3 cups fresh baby spinach
  • 1 large zucchini (spiralized into wide noodles)
  • 2 tablespoons fresh sliced basil
Instructions
  1. Preheat the oven to 375°F.
  2. Heat the oil in a large cast-iron skillet over medium heat.
  3. Add the onions and garlic and sauté for 2 to 3 minutes until the onions are translucent.
  4. Stir in the tomatoes and season with salt and pepper – simmer for 10 minutes.
  5. Combine the ricotta cheese, shredded mozzarella, parmesan, and egg in a mixing bowl – stir well then set aside.
  6. Heat a large skillet over medium heat and grease with cooking spray.
  7. Add the spinach and cook until wilted then fold it into the cheese mixture.
  8. Spoon half the sauce from the cast-iron skillet into a bowl and spread the rest evenly in the bottom of the skillet and top with zucchini noodles.
  9. Add the rest of the sauce over the noodles then spoon the cheese mixture onto it in dollops.
  10. Cover with foil and bake for 20 to 25 minutes until the cheese is melted.
  11. Garnish with fresh sliced basil to serve.
