- 1 cup almond flour
- 2 tablespoons coconut flour
- 1/2 tablespoon xanthan gum
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 tablespoon water
- 2 teaspoons apple cider vinegar
- 1 large egg (whisked(
- 1/2 cup Spiced Cranberry Relish
- 1 (8-ounce) wheel brie (diced)
- 1/4 cup chopped pecans
- Fresh cracked pepper
- Combine the almond flour, coconut flour, xanthan gum, baking powder, and salt in a food processor and pulse several times to combine.
- Add the water, vinegar, and egg then blend until it forms a sticky dough.
- Wrap the dough in plastic and knead for two minutes then let rest for 15 minutes.
- Divide the dough into eight pieces and roll into balls.
- Roll out the dough balls between two sheets of parchment into 6-inch circles.
- Preheat the oven to 350°F and lightly grease 8 cups of a muffin pan with cooking spray.
- Place the dough circles in the cups, pressing them into the bottom and sides.
- Divide the cranberry relish among the cups and top with diced brie and chopped pecans.
- Season with fresh cracked pepper then bake for 12 to 15 minutes until the pastry is golden brown and the brie is melted. Serve warm.
