- 1 large head cauliflower (chopped)
- 3/4 cup shredded cheddar cheese
- 3 tablespoons sour cream
- 1 tablespoon butter
- salt and pepper
- fresh chopped chives
- Place the cauliflower in a large saucepan and cover with water.
- Bring to a boil and cook for 12 to 18 minutes until the cauliflower is very tender.
- Drain the cauliflower and transfer it to a food processor.
- Add the cheddar cheese, sour cream, and butter then blend smooth.
- Season with salt and pepper to taste then spoon into a bowl.
- Top with fresh chopped chives to serve.
