While many of us have tried creamed spinach (a Thanksgiving favorite), this recipe takes that classic idea and makes it a little bit more exciting by adding some aromatic spices and giving the dish a curry makeover. It is a true combination of classic American food and middle eastern cuisine and is sure to brighten up your meal (especially due to the brilliant colors!).
Spinach is one of the keto diets go-to veggies. With only 4 net carbs in an entire 1 ½ cup serving of spinach, you get a lot of food with a very low carb count, something every keto dieter wants! Spinach, in general, is a nutritional powerhouse, containing lots of protein, fiber, vitamins, and magnesium. Thanks to all the fiber in spinach, after eating a healthy helping of the veggie, you will feel fuller for longer thanks to the slow digestion that fiber requires. Seems like this veggie is a total keto keeper!
Now, to make that awesome spinach taste amazing. We took inspiration from traditional creamed spinach (a creamy, cheesy baked dish) and flavorful curry. Curry is a traditional combination of spices that originated in India. While there are many full meals that are considered “curry”, the name typically refers to the spice combination in the dish. A classic curry blend is made with turmeric, cumin, coriander, ground ginger, and dried chilies. This blend of spices is what makes curry, curry!
While our recipe calls for just 1 tsp of premade curry powder, feel free to sprinkle in a little more for extra flavor. When shopping for curry powder, make sure there are no extra sugars added in. Most curry will not have sugar but, with any premade spices, you always want to be sure!
You can also easily make your own curry powder blend using a recipe to mix together your spices. Make a big batch of your own curry powder to have on hand for any curry recipe. You can adjust it as well, adding a little more chili powder or a touch extra ginger to customize your blend. Make it as spicy or as mild as you'd like. Traditional curry does have a good, spicy kick though so try not to skimp on the chili powder for a more authentic taste!
Once you are ready to make this creamy curry spinach, it will only take you about 15 minutes to put together, from start to finish. Low carb and super easy, this recipe is a total home run! Pair it with a nice grilled steak, as a side to some glazed pork chops or just have a nice big bowl of curried spinach for lunch. We definitely recommend adding it to your Thanksgiving table to liven up that basic creamed spinach side dish as well! Enjoy!

Add the coconut oil to a large saute pan along with the red pepper flakes and onion.
Heat over medium, stirring constantly until the onions begin to soften, about 5 minutes.
Add the garlic sliced and cook for one more minute.
Add the curry powder and cook for another minute, stirring occasionally.
Add the spinach to the pan and stir until wilted, about 1-2 minutes.
Add the heavy cream and cream cheese and cook stirring constantly, until the cream cheese is melted and blended in.
Season with salt and serve while hot.
