- 6 large eggs
- 1/3 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 teaspoon curry powder
- 1/4 teaspoon salt
- Pinch cayenne
- Place the eggs in a saucepan and fill with cold water.
- Bring the water to a boil then reduce heat and simmer for 6 minutes.
- Transfer the eggs to an ice bath to stop cooking and let them cool.
- Once cooled, peel the eggs and cut them in half, scooping the yolks into a bowl.
- Stir in the remaining ingredients then spoon the mixture into the empty halves.
- Sprinkle with a pinch of paprika to serve.
