- 1/2 cup almond flour
- 1/4 cup coconut flour
- 1/2 tablespoon baking powder
- 1/2 teaspoon garlic powder
- 1/4 teaspoon onion powder
- Pinch salt
- 1 1/2 cups shredded mozzarella
- 5 tablespoons coconut oil (melted)
- 1 large egg (whisked)
- 3 tablespoons butter (melted)
- 2 tablespoons grated parmesan cheese
- 5 cloves minced garlic
- Preheat the oven to 350°F and line a baking sheet with parchment.
- Whisk together the almond flour, coconut flour, baking powder, garlic powder, onion powder, and salt in a medium mixing bowl.
- In a medium saucepan, melt the mozzarella cheese then remove from heat.
- Stir in the coconut oil and egg until well combined then stir into the dry ingredients until it comes together in a dough – there may still be streaks of cheese in the dough.
- Turn the dough out and knead for 30 to 60 seconds until uniform in texture.
- Chill the dough for 10-20 minutes in the refrigerator.
- Divide the dough into 16 pieces and roll them into small balls.
- Stir together the melted butter, parmesan cheese, and garlic in a small bowl.
- Place the dough balls on the baking sheet then brush with the parmesan garlic butter.
- Bake for 15 to 20 minutes until just browned then brush with any remaining butter to serve.
