Easy Low Carb Lemonade Recipe
A nice cold glass of lemonade is the perfect way to cool off in the hot summer heat. That sweet, lemony taste just hits the spot every time! Our low carb, keto lemonade will let you enjoy glass after glass of this guilt free, diet approved beverage. So get out that big pitcher, grab a few lemons and make a big batch of our lemonade to keep in your fridge- you will be happy you have it ready to go when the weather heats up!
Lemons are a keto approved fruit but, just like any fruit, it does have a few carbs so it is important to keep that in mind when you make this tasty lemonade. However, the health benefits of lemons are also great and well worth the small amount of carbs. Lemons are packed with vitamin C which can help improve your immune system and also maintain your bone health. Lemons also have a high amount of soluble fiber which promotes gut health.
When making this recipe, we definitely recommend using fresh squeezed lemon juice. Sure, you can buy lemon juice in a bottle at the grocery store but it is rarely just lemon juice inside that bottle. There may be added preservatives or even hidden sugars! Fresh squeezed lemon juice also just tastes the best and you will especially notice the powerful flavor when you are drinking it straight from the glass.
Before you cut into your lemons to squeeze them, place the lemon on your counter top, press down on the fruit and roll it back and forth. This will soften the lemon and help make the juice easier to extract. You can also place the lemon in the microwave for 10 seconds to soften it even more. The softer the lemon, the more juice will come pouring out of it when you slice it open!
Now onto the sweetener in our low carb lemonade. We used our favorite monk fruit, erythritol blend to give this lemonade the perfect amount of sweetness and taste. Monk fruit is very sweet without having that metallic taste that some low carb sweeteners have. Monk fruit sweetener is made by drying the juice of a monk fruit and making it into a concentrated powder. The sweetener is then blended with granulated erythritol to create the perfect, delicious sweetener for your lemonade!
The sweetener is boiled with some of the water in order to ensure it is totally dissolved and will mix evenly into the lemonade, making every sip nice and sweet. Once everything is mixed together, place the lemonade in the fridge and enjoy whenever you’d like! While we don’t think this lemonade will stick around very long, it will last for up to a month in the fridge. You can also freeze some in popsicle molds to make lemonade pops- just another way to stay cool in the summer heat!

- 1 cup fresh squeezed lemon juice
- 8 cups water
- 1/2 cup So Nourished monk fruit erythritol sweetener
- 8 slices lemon (optional)
- Place the monkfruit erythritol blend in a small pot along with 2 cups of the water. Bring to a boil and stir to dissolve the sweetener. Set aside to cool
- Once cool, mix the sweetened water, remaining water and fresh lemon juice in a large pitcher.
- Store in the fridge to cool and pour over ice when ready to enjoy! Garnish with lemon slices if desired.
