If you have a gathering scheduled, you have to make sure that this recipe makes an appearance. This particular recipe makes six servings, but you can easily multiply it to make even more! - 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1-2 tablespoons fresh lime juice
- 2 chipotle chilis in adobo
- 1 pound ground beef (80% lean)
- 1/4 cup finely diced pepperoni
- salt and pepper
- Combine the mayonnaise, sour cream, lime juice, and chipotle peppers in a blender.
- Blend until smooth then pour into a small bowl.
- Combine the ground beef, pepperoni, salt, and pepper in a bowl and stir well.
- Shape the mixture into 36 small balls by hand then place on a parchment-lined baking sheet.
- Bake for 10 to 15 minutes at 350°F until browned and cooked through, turning as needed.
- Serve the pepperoni bites hot with chipotle mayo for dipping.
