Sometimes there just isn't enough time to run out and grab a healthy low carb meal during the workday, or the options are limited and that can get really boring really quick. For those reasons, I love prepping lunches and dinners ahead of time as much as possible to save time. It's one less thing to worry about every day if you just dedicate some time once or twice a week to the task. When I prep my meals for the week, I look for delicious meals that are easy, quick and convenient. I have gathered together my favorite, easy, keto lunch recipes that you can easily make ahead of time and bring to work.

One of my favorite ways to save time during meal prep is to make casseroles because you can get more meals out of one dish. Casseroles are usually made in big 9×13 baking dishes which is enough for almost an entire week of lunches! A lot of these casserole recipes also freeze really well so, if you don't feel like eating the same lunch every day, you can freeze half of the casserole and then take it out for lunches within the next few weeks. I've included some of my favorite casseroles on this list for you to try. They are a great, make-ahead low carb option (and lots of them are perfect for dessert as well!

And what's a lunch list without some quick sandwiches? Just because you are following a keto diet does not mean that you have to rule out sandwiches completely. There are many ways that you can make great low carb sandwiches especially when you just take bread out of the equation. You can easily replace bread with things like a large lettuce leaf, making delicious and travel-friendly lettuce wraps. You can also make or buy low cab bread. There are actually lots of keto bread recipes that are fantastic for sandwiches. From cloud bread to almond flour breads, you can definitely find something great! Soups or salads? Those definitely need to be on the list! There are hundreds of soup and salads that are low carb but I have chose my favorites that really help liven up the day at lunchtime. There are soups that are great for cold weather and also options that are delicious in the hotter summer months. Soup doesn't have to just be for winter! On the other hand, salad doesn't have to be just for summer. There are some great hearty salads that will definitely fill you up despite being low carb.
